A tender beef shoulder roast with a Stilton crust, served with blanched green beans, crispy croutons, and a fresh mint garnish for a delicious and flavourful dish.

Ingredients

  • 1.5kg beef shoulder (approximately)

Stilton Crust Ingredients:

  • 75g butter, softened
  • 99g Stilton blue cheese
  • 100g breadcrumbs

Green Bean Ingredients:

  • 226g green beans
  • Day-old bread for croutons
  • Butter
  • Oil
  • 1 garlic clove, minced
  • 5ml red wine vinegar
  • Fresh mint leaves

Method

Prepare the roast: Preheat the oven to 190ºC. In a hot pan, brown all sides of the shoulder. Set the shoulder aside in the fridge to cool.

Make the Stilton crust: In a bowl, combine the softened butter with the Stilton blue cheese and breadcrumbs to form a paste. Once the shoulder has cooled, smother it with the paste. Place in the oven and cook for 40 minutes to 1 hour, depending on its size. Once cooked, rest the meat.

Prepare the vegetables: Blanch the green beans in boiling water, then refresh them in cold water. Pan-fry the torn bread with butter, oil, and garlic to create croutons. Return the beans to the pan, add a splash of vinegar, and heat until the beans are warm again. In the final seconds, toss through the fresh mint.

To serve: Slice the Stilton-crusted beef roast and serve it with the green beans and mint.
