Chef Adam Moore Aussie Lamb Sloppy Joeys

These "Sloppy Joeys" feature a delicious lamb filling with vegetables and seasonings, served in a toasted sandwich roll and topped with crispy onions for a fun and tasty twist on the classic sloppy joe.

Ingredients

  • 1 Tablespoon extra virgin olive oil
  • ½ cup sweet onion, minced
  • ¼ cup carrot, minced
  • ¼ cup celery, minced
  • 1 clove of garlic, minced
  • 450g minced Australian lamb
  • 2 Tablespoons flour
  • 1 ½ cups vegetable broth
  • ½ teaspoon dried thyme
  • 2 Tablespoons tomato paste
  • 1 Tablespoon Worcestershire sauce
  • 1 teaspoon Kosher salt
  • 1 teaspoon Vegemite (optional)
  • 4 each sandwich buns, toasted
  • Crispy onions (such as French’s), for garnish

Method

  1. In a large skillet over MEDIUM-HIGH heat, add oil, onion, carrot, celery and garlic. Cook until vegetables are tender - about 5 minutes.
  2. Add lamb and cook until browned throughout- about 7 minutes. Use a spatula or potato masher and break into small pieces while cooking.
  3. Reduce heat to MEDIUM-LOW, stir in the remaining ingredients and bring to a simmer. Continue cooking until thickened- about 20 minutes. Stir occasionally.

To serve:

  1. Scoop desired amount of the sloppy joey mixture on top of the toasted buns. Garnish with crispy onions and serve with your favorite side dish.
