This Aussie lamb tartar features fresh minced lamb, seasoned and garnished with Calabrian chilli puree, pine nuts, quail egg, and other vibrant toppings for a delicate and flavour-packed dish.

Ingredients

Portion Size: 4-6 ounces of tartar
Alternate cuts: Lamb tenderloin

Ingredients:

  • 4 each minced Australian lamb short loins
  • Kosher salt to taste
  • Black pepper to taste

Garnish:

  • Calibrian chile puree as desired
  • Pine nuts as desired
  • 8 each quail egg
  • Candied lemon peel as desired
  • De-stemmed thai basil leaves as desired
  • Parsnip chips as desired

Method

To serve:

  1. Arrange minced lamb on a plate and season with salt and pepper.
  2. Garnish with calibrian chile puree, pine nuts, 1 quail egg, candied lemon peel, thai basil leaves and parsnip chips.
