Aussie lamb tartar


Portion Size: 4-6 ounces of tartar
Alternate cuts: Lamb tenderloin

4 each minced Australian lamb short loins
Kosher salt to taste
Black pepper to taste

Calibrian chile puree as desired
Pine nuts as desired
8 each quail egg
Candied lemon peel as desired
De-stemmed thai basil leaves as desired
Parsnip chips as desired


To serve: arrange minced lamb on a plate and season with salt and pepper. Garnish with calibrian chile puree, pine nuts, 1 quail egg, candied lemon peel, thai basil leaves and parsnip chips.
